Zucchini Parmesan Bake
I forgot I never put this up before, so I figured now is better time than ever since I don’t have anything to put up until my furniture and all our stuff gets delivered.
On another note, when I go to blogger.com its all in German lol. I have no idea how to fix it…luckily I know my way around blogger and can click on things without having to read them. I need to figure out how to get websites in English OR learn German. Maybe both lol…
6 zucchini, sliced thin with mandolin
1 cup Parmesan cheese
1 cup mozzarella cheese
3 Tbsp pepper
1/2 Tbsp salt
cayenne pepper to taste
3 Tbsp oregano
3 Tbsp basil
Preheat your oven to 350 degrees
Layer your zucchini in a baking dish, then top with some of the pepper, salt, cayenne, oregano and basil. Then sprinkle on some of the mozzarella and Parmesan.
Layer more zucchini and do the same as above until all your spices, cheese and zucchini are gone. I believe I made 7 layers with mine.
Bake in the oven for about 30/40 minutes until the top is browned and the zucchini underneath is tender.
