I have been making these lately, and putting a lot of stuff in them to switch it up. 🙂
1/4 cup small yellow tomatoes, chopped
1/4 cup Roma tomato, chopped
1/4 yellow pepper, chopped
5 mushrooms, sliced
2 Tbsp parsley, chopped
1/4 cup water
1 tsp cayenne pepper
salt and pepper
3 slices of cheddar cheese
3 slices avocado…if you want
In a small pan, melt a tbsp of butter and add the tomatoes, pepper, mushrooms and parsley. Saute until the veggies are tender, about 5 minutes.
In a bowl, whisk together the eggs, water, cayenne pepper, salt and pepper.
Pour the egg mixture into the pan with your veggies, and cover with the led. Once it has cooked so the sides are done, add the cheese to the top, and cover again.
Cook for about 5 more minutes until the middle is cooked through and the cheese is melted.
Recipe makes 4 servings
