I made this for dinner last night…man it has been HOT here. Everyone said it never gets hot out here, but it does. I know it isn’t like California where its 100+ degrees…but it gets around 85 and humid. Today its supposed to rain and we are all already sweating so that should be interesting. Ill never forget summer in Boston…95 degrees and raining. That was probably the hottest I have ever been because of all the humidity. Even 115, pregnant, at Fort Hood was better than humid lol.
Ok. It’s time for me to work now…I just wanted to post this recipe first 🙂
1 lb ground beef
1/2 onion, chopped
1/2 yellow pepper, sliced or chopped whatever you prefer
1 garlic clove, minced
1 head of lettuce
2 tomatoes, chopped
1 can black beans
1/4 cucumber, shredded
1 carrot, shredded
1 avocado, cubed
1 tsp salt
1/2 Tbsp pepper
1 Tbsp oregano
1/2 Tbsp paprika
1/2 Tbsp chili powder
1 Tbsp cilantro
1 cup shredded Cheddar (optional)
Heat you pan on medium, and add a little olive oil.
Once the oil is hot, add the onion, garlic and yellow pepper. Once the veggies start to get tender, add your ground beef, salt, pepper, oregano, paprika, chili powder and cilantro. Cook for about 10 minutes, stirring occasionally, until your meat is cooked through.
While you are doing that, heat a small pot on medium as well, and add your black beans. Cook for about 5-8 minutes until tender.
To assemble, place your lettuce on the plate and top with shredded cucumber, carrot, tomato, avocado, black beans and meat mixture. You can shred some cheddar on top if you want, and use salsa for your dressing. Sometimes I make my own salsa to make sure there is no sugar, but you can use whatever you would like. A little lime would be good too.
Recipe makes 3 servings…this is my husbands plate so he had more like 1 and a half 🙂
