Spicy Shrimp Lettuce Cups
These are JUST like the tilapia cups, but with shrimp 🙂
1 lb shrimp, cleaned with the tail off
1/4 cup onion
1/2 cup cilantro, chopped
1 lemon, juiced plus another lemon juiced
1 lime, juiced
1 head of boston lettuce
1 Tbsp garlic powder
1 Tbsp cayenne pepper
1 Tbsp oregano
1/2 Tbsp paprika
1 tsp salt
1 tsp pepper
1 tsp chili powder
First cut the leaves off the head of lettuce, wash them, and set aside to dry.
In a bowl, add your chopped onion, cilantro, juice of 1 lime and juice of 1 lemon along with a little salt and pepper. Mix together and put in the fridge until you are ready to use it.
In a quart size plastic zip lock bag, put the garlic powder, cayenne pepper, oregano, paprika, salt, pepper and chili powder. Shake it around to mix everything up. Add your cleaned shrimp and toss around to coat them.
Heat a large skillet over medium heat with a drizzle of olive oil. Add the seasoned shrimp, and squeeze 1 lemon over it. Cook through until pink, about 5 minutes or so.
Slice your half of avocado into strips.
To plate, put down 1 piece of lettuce, a spoonful of shrimp, a spoonful of the onion mixture and slice of avocado. You can squeeze some lime over it if you prefer.
Recipe makes about 8 lettuce cups.
Each lettuce cup has 1 carb so really, if you were hungry, you could eat them all lol.
