Salmon Cakes with Lemon Aioli
I put up a recipe for grilled salmon, and while I was making it I realized my brother doesn’t eat fish. So, I took what would have been his piece, saved it, and made salmon cakes the next day. I tried cooking them in coconut oil, but that kind of browns quickly, so next time I may just use vegetable oil. Hope you like them!
1 piece of salmon (it was about 1/4 lb or so)
1/2 stick unsalted butter
1 shallot, chopped
1/4 yellow pepper, chopped
1 tsp salt
1 tsp pepper
1 tsp cayenne pepper
1 tsp paprika
1 1/2 tsp Worcestershire sauce
1 tsp lemon zest
dash of hot sauce
small handful of fresh parsley, chopped (about 2 Tbsp)
1/4 cup almond meal
For the lemon aioli:
1/2 cup mayo
1 clove garlic smashed through a garlic press
3 Tbsp lemon juice
zest of 1 lemon
salt and pepper
*This usually has chives chopped as well, but i didn’t have any 🙂
First, make your Aioli sauce and put it in the refrigerator until ready to use. Just mix all the ingredients in a bowl. Super easy.
In my case, the salmon was leftover so it was already grilled. However, if you aren’t using left over fish, just heat up your grill pan on medium heat.
Brush your grill pan with oil, and salt and pepper your salmon. Grill on both sides for about 4-5 minutes. Just until it looks cooked through.
Once the salmon is done grilling, flake it and put in a medium size bowl.
Heat up another pan on medium high heat, and add your butter.
Once the butter is melted, add your chopped shallot and yellow pepper. Saute for about 4-5 minutes until tender.
Add the sauteed veggies with butter to your bowl with the salmon.
In the same bowl, add all your spices, eggs, Worcestershire sauce, lemon zest, hot sauce, chopped parsley and almond meal. Mix together until all combined.
In the same pan where you cooked your veggies, drizzle the pan with vegetable oil or coconut oil. Whichever you prefer.
Create your patties by rolling portions of the mixture into a ball, then pressing flat. Cook the patties in the oiled pan for about 4-6 minutes on each side, depending on how fast they cook. You want the outside to be golden, and the inside cooked through making sure everything sticks and holds together.
Top with lemon aioli sauce 🙂
