I think creating new main dishes isn’t too hard, but side dishes tend to get old from time to time because its always the same thing. I have been trying to think of ways to mix it up a bit. Green beans aren’t too popular around here, but every so often I find them and buy them. Since Chanterelle Mushrooms are sold in bulk this time of year, I bought some more and used them in this recipe. They were yummy!
1 package green beans
2 cups chopped Chanterelle mushrooms
2 garlic cloves, minced
1/4 red pepper, minced
1 shallot, minced
1 tsp black pepper
1/2 tsp salt
1 tsp basil
1 tsp oregano
1/2 tsp cayenne pepper (optional)
Preheat your oven to 375 degrees
Mix all your ingredients in a baking dish and drizzle with olive oil and toss around until coated.
Bake in the oven for approximately 40 minutes until the green beans are al dente.
Recipe makes 4 servings
