I was craving pizza, but I didn’t have the veggie crust pizza ingredients on hand so decided on pizza stuffed chicken instead! My daughter is on a pepperoni obsession lately…she will eat anything with pepperoni on it. In other words, she ate every last bite of this chicken lol. Of course you can use whatever pizza toppings you like, but we chose cheese, pepperoni, peppers and mushrooms!

5 boneless skinless chicken breasts
30 slices of pepperoni (yes 30!)
8 mushrooms, diced
1/2 yellow pepper
2 cups Marinara Sauce (you can also use a low sugar pizza sauce)
1 ball mozzarella cheese (or 5 large slices)
1/2 cup Parmesan cheese
1/2 tsp salt
1/2 tsp pepper
Preheat your oven to 350 degrees
Cover your chicken breast with plastic wrap, and pound the chicken thin so its about 1/2″ or so.
Place your chicken on a board, and salt and pepper the inside of each piece.
Sprinkle some of the Parmesan on each piece along with 6 pepperoni, some of the mushrooms and peppers. Roll the chicken up and place seam side down in a baking dish.
Once you have rolled all 5 pieces of chicken, top with 2 cups of Marinara sauce then the mozzarella cheese. You can use shredded mozzarella or slices, that is up to you.
Cover the dish with foil and bake for 30 minutes.
Remove the foil and cook another 10 minutes.
