I was on Instagram and saw someone post their shrimp and tortilla salad they were eating from a take out place, and I was like ohhh I have to make my husband a salad with shrimp on it! That is where this came in lol. Kind of like a cobb salad minus the cheese and egg, definitely made a Paleo meal this time! It was yummy and filling….plus you don’t feel bad afterwards! Makes those 49 days I have done of Insanity worth it lol.

Today is a good day people!! I have also gotten a lot of response regarding my 60 Day Summer Weight Loss Challenge which is exciting! I love helping you guys lose weight and get fit!
So here are the ingredients for my salad! Super easy!!
1 head iceberg lettuce, chopped
2 large handfuls arugula
1 avocado, cubed
2 tomatoes, chopped
5 pieces bacon, chopped
1/2 cucumber, chopped
1-1/2 lbs shrimp, cleaned and shells removed
1 tsp black pepper
1 tsp oregano
1/2 tsp salt
1 tsp basil
1 tsp garlic powder
1/2 tsp smoked paprika
1 lemon, juiced
1/4 cup walnuts, chopped (optional)
*You can serve this with a vinaigrette of your choice. I did an Italian dressing, no sugar of course.
Heat a large pan on medium-high heat and when hot, add your bacon. Cook on both sides until crispy, then remove onto a paper towel lined plate.
In a large bowl, mix together the raw shrimp, pepper, oregano, salt, basil, garlic powder, smoked paprika and lemon juice.
Clean out your pan you used for the bacon, and heat on medium.
You can chop your veggies while you are waiting.
Add about 10 shrimp at a time to the hot pan, and cook for about 1-1/2 to 2 minutes on each side. Remove from the pan and cook the rest of your shrimp.
To assemble, place a large handful of lettuce on your plate, and top with the chopped tomato, avocado, bacon, avocado, cucumber, walnuts and shrimp!
