Heyyyy! So it is 11:45pm and I am up blogging about cake…that can’t be good. I found PicMonkey a couple weeks ago, and found out I can edit my food pics there. See my collage above…I spent way too much time on there. I also took a photo of my son and made him into Santa…yea…they let you do that.
Anyhoo…..did you know you can make cake in 3 minutes? Who knew. I have tried a few mug cakes…but it’s kind of overpowered with cocoa powder, so not that sweet. I never want to add more sweetness because I don’t want all the sugar…whether its raw honey or not…sugar is sugar ya know! So I made my own…three times…and third time is a charm because I loved it! The first 2 had honey…so I guess it was the honey I didn’t like. I switched it out for a banana, and it worked much better.
Yes, you use the microwave. I’m sorry…don’t kill me. I actually asked my husband if I could throw it away…he said no he needs it lol. If you want to pop it in the oven, feel free, it will just take longer.
1 small or 1/2 of a large Banana
1 Tbsp Cocoa Powder (Unsweetened)
1 Tbsp Almond Flour
2 Tbsp Tapioca Flour
1 tsp Coconut Flour
1 Tbsp melted Coconut Oil
1/4 tsp Baking Powder
Dash of Cinnamon
Dash of Salt
First get a large mug. If it has a big Santa on it…even better. ha.
Next, use a fork and mix together all the ingredients in your mug.
Place in the microwave for 2 minutes.

You can eat it by yourself…but it rises quite a bit so can easily be shared. I am giving you the nutrition facts for both scenarios….
