Mozzarella and Basil Stuffed Burgers
There are a lot of fresh herbs and cheese around here…I need to get back on the low carb track…so I made burgers. They have Metzgerei’s here that have really good meat and salami…another word for butcher shop I guess. The German quality of meat is much better than American, in my opinion, and it costs less. California is just expensive either way you look at it. Although, I tried to get my nails done, and they want $90 to do that! That is outrageous….so I guess certain things cost more around here. Not to mention the euro costs more than the American dollar.
Anyway, back to making new recipes and doing laundry!
2 lbs ground beef
2 cloves minced garlic
1 Tbsp oregano
1 tsp salt
1 tsp pepper
1/2 tsp cayenne pepper
1/4 cup Worcestershire Sauce
1/2 cup grated Parmesan cheese
6 basil leaves
1 ball fresh water mozzarella, cut into 6 chunks
Mix together the ground beef, garlic, oregano, salt, pepper, cayenne, Worcestershire and Parmesan cheese in a large bowl.
Heat your grill….grill pan…George foreman…whatever you use…on medium heat and brush with olive oil.
Make one thin patty, place the basil leaf and 1 chunk of mozzarella in the middle, and put another thin patty on top. Pinch the sides together and flatten it out a bit so its all sealed. I rolled mine around a little like a meatball, then flattened it again because i didn’t want the cheese to leak out.
Grill on each side until cooked through. I cooked mine on the George Foreman because that’s all I have right now…but I don’t close the lid because it squeezes all the juice out. So, cooking on each side takes a little longer. On a regular grill, you only need about 8 minutes on each side.
Top with a slice of tomato, avocado, or wrap in lettuce…whatever you prefer 🙂

Each burger has almost 1 carb
