Lemon Spiced Salmon and Asparagus
My husband was just home on leave for Christmas, so that was a lot of fun. A reminder of how much I miss him when he is away. I made this for him, along with a lot of other dinners, but I forgot to take pictures of them all. What kind of food blogger am I?? lol
4 salmon fillets, skin removed
1 Tbsp black pepper
1/2 Tbsp salt
1 Tbsp oregano
1 Tbsp basil
1 tsp Cayenne pepper
1/2 Tbsp old bay
1 Tsp garlic powder
2 bunches of asparagus
1 tsp salt
1 tsp pepper
1/2 lemon, juiced
1 Tbsp Sriracha hot sauce
In a small bowl, mix together all the herbs and spices.
Cut your lemon in half, and juice over both sides of the salmon. Sprinkle the herb mixture over each side of the fish as well.
In a large skillet, melt 2 Tbsp coconut oil (or you can use butter). Cook the fish on each side for about 4 minutes…until it is seared and the middle is cooked through.
In another medium sized pan, add 1 Tbsp coconut oil (or butter).
Once melted, add the asparagus and coat in the oil. Then add the lemon, sriracha, salt and pepper. Mix together until everything is coated. Cook for about 8 minutes…you want the asparagus to have a bite to them. If you over cook them they will be mushy…not my favorite lol.
Place your cooked salmon on your plate with a slice of lemon on top, and your asparagus along side.
