Grilled Spicy Lime Tilapia Tacos
Let me start by saying I made a trip to Whole Foods. As much as i love that store, wow, it is expensive lol. They are one of the only stores with low carb stuff though…I found these awesome tortillas with only ONE carb. I also found some bread with one carb as well. Granted, the bread was $8 BUT sometimes you just want toast in the morning lol. Anyway, I took my one carb tortillas, grilled some tilapia and made really good tacos!
5 tilapia fillets (I also remove that vein down the middle, so 5 fillets turn into 10 small ones)
1 yellow pepper
2 cups baby spinach
salt and pepper
1 lime, juiced
1 small lemon, juiced
1 tsp salt
1 tsp pepper
1 tsp cayenne pepper
First heat your grill, or your grill pan, but I did this one outside.
Once your grill is hot, put the whole pepper on the grill.
Next, I cut my tilapia in half to remove the vein line like I said above. Then sprinkle both sides with salt, pepper and cayenne pepper.
Place a large piece of foil down on the grill, and spray with cooking spray. Put your tilapia side by side on the foil, and cook on both sides for about 4 minutes. Once the first side is done cooking, squeeze the juice of 1 lime over the tlapia, then flip over and cook the other side.
You CAN put it on the grill directly, but there’s a bigger chance it will break and fall through the grill which is no good lol.
Once the tilapia is done, the pepper should be done too. Remove both from the grill and set aside.
Once the pepper is cooled, remove the skin, it should be kind of charred and come right off. Then, thinly slice the pepper.
In a food processor, add all the avocado sauce ingredients except for the olive oil. Blend together for a few seconds then start to drizzle the olive oil. Blend and keep adding drizzles of olive oil until you reach a thick sauce consistency.
Heat your 1 carb tortillas (if you cant find them, just use lettuce wraps) on the grill or in the microwave.
In the tortilla, flake your tilapia, add a few spinach leaves, some sliced pepper and your avocado sauce.
Recipe makes 5 servings. Each serving is 2 tacos like above.
Each serving has 4 carbs (that means you can eat 3 if you want and still only be at 6 carbs lol)
