Grilled Salmon with Mango Salsa and Asian Broccoli
We try and do fish 3 times a week…it helps you lose weight faster lol. This was very good…it went over very well at the house. It is also something my husband can make on the George Foreman in his room. I miss cooking for him.
For the fish:
2 lb salmon fillet cut into 5 portions
1 orange, juiced
1 lemon, juiced
cayenne pepper
salt and pepper
old bay seasoning
For the salsa:
1/2 mango, diced
1 avocado, diced
1/4 small red onion, chopped
small handful of cilantro, chopped
1 lime, juiced
1/2 tsp salt
1/2 tsp pepper
1/2 tsp cayenne pepper
For the broccoli:
3 heads of broccoli, cut into florets
3 Tbsp Oyster Sauce
2 garlic cloves, minced
2 Tbsp soy sauce
1 Tbsp olive oil
For the salmon:
Heat your grill on medium heat and brush with olive oil so it doesn’t stick to the grill.
I took the skin off my salmon, and cut into 5 pieces. Season each piece on both sides by just sprinkling salt, pepper, old bay and cayenne pepper.
Squeeze the juice of 1 lemon over all the fish along with the juice of 1/2 of an orange.
Place the salmon on the grill. Once the first side is done cooking, about 4 minutes, flip over and squeeze the juice from the other orange half, over the top. Cook for another 3 to 4 minutes.
For the broccoli:
Heat a pan over medium heat and add your olive oil.
Add the garlic to the pan and cook for one minute, then add the soy sauce and oyster sauce. Cook for another minute, then add the broccoli.
Stir the broccoli around in the pan to coat with the sauce, then put the lid on. Cook the broccoli, stirring occasionally, until cooked. This takes about 15 minutes.

**Note for the husband, or anyone who isn’t able to use the stove top: Just add the ingredients to a bowl, mix your broccoli in it, then grill the broccoli instead. :)

For the salsa:
Add your cut up mango, avocado, red onion and cilantro to a bowl. Squeeze in the lime juice, and add salt, pepper and cayenne pepper. Mix together.
Top your salmon with mango salsa with broccoli to the side.
Recipe makes 5 servings
Each serving has 11.2 carbs
(If you want this lower in carbs, you can omit the mango from the salsa, but 11.2 carbs is no big deal for an entire meal)
