Grilled Pork Chops with Blackberry Sauce and Grilled Veggies
I have really been trying to get more on here, and have some pictures/recipes waiting for me to post, I just haven’t found the time lately! I am doing this one tonight, and the rest will follow within the next couple of days. I think this is one I am going to make my husband when he comes out to visit us (its coming soon!!!)
For the pork chops:
10 pork chops
1 Tbsp chopped Thyme
1 Tbsp Oregano
1 tsp salt
1 tsp cayenne pepper
1 tsp black pepper
For the blackberry sauce:
12 oz blackberries
1/2 cup balsamic vinegar
1/2 cup water
juice of 1 lemon
1 tsp salt
For the veggies:
1 yellow squash
1 head of broccoli
8 oz mushrooms
1 tsp pepper
1/4 cup soy sauce
2 Tbsp rice vinegar
Heat up your grill.
Season all your pork chops with all the seasonings, and set to the side.
Chop your zucchini and squash into cubes. Cut your mushrooms in half, and cut your broccoli into florets.
Place all the veggies into a large bowl, and add the pepper, soy and vinegar. Toss to coat.
I put my veggies on skewers but it didn’t work out too well because the skewers burned this time. Oops lol. So just put all the veggies on foil on your grill and cook that way.
Once on the grill with the foil, cook for about 15 minutes or so. Just until the veggies are cooked through.
While the veggies are grilling, make your blackberry sauce…
Heat up a small sauce pan.
Add all the sauce ingredients to the pan, and let it simmer until the berries have broken down a bit. I let mine cook for as long as the veggies were grilling on the foil (about 15 to 20 minutes).
Once the sauce is done, pour out the liquid into a bowl and reserve the berries for later.
Remove the veggies from the grill and put in serving bowl.
Take your seasoned pork chops, and place on the grill. Brush the top with the blackberry sauce you have in the bowl. Flip over the pork chop, and brush the other side. Wait 1 minute, then flip over and brush the other side again. I kept flipping and brushing until the sauce was gone…it was about 4 times each side.
Then, once you have brushed them to death, let them finish grilling on each side. About another 2-3 minutes each side so you get some grill marks.
Remove the pork chops from the grill, and top with the reserved blackberries and put your veggies to the side.
Each person in my family had 2 pork chops and just as much veggies as shown in the picture above. I am considering that 1 serving.
