Today I have been cooking things just for the website…I don’t think I have ever done that before. I usually plan on making something for lunch or dinner, and I put it on the web, but never the other way around lol. Today for lunch I made a tester curry chicken stuffed pepper and some sandwich cucumber roll ups. My husband ate them for lunch…he is my taste tester most of the time. I also have so many meatball ideas…I have been on a meatball kick lately. I have 12 different meatballs I want to make, some I have already done in the past, and some are new. I decided to start with the Greek ones…out of the 2 I made today I liked these the best! I even used my Kitchen Aid attachment and ground my own chicken.
1-1/2 lbs ground chicken
handful of spinach leaves, chopped
8 sun dried tomatoes, chopped
1/4 cup crumbled feta
1 tsp salt
1 tsp pepper
pinch of red pepper flakes
1 tsp thyme
For the Tzatziki sauce:
2 cups Greek yogurt
1/2 cucumber, peeled and grated
1 Tbsp chopped dill
1/2 lemon, juiced
salt and pepper
dash of cayenne (just because i like it)
First make the sauce as this has to sit in the fridge for a little bit. Mix together all the ingredients in a small bowl and cover in the fridge. Make sure its Greek yogurt…regular yogurt is too runny and is higher in carbs.
To make the meatballs:
Preheat your oven to 350 degrees
Mix all the meatball ingredients together in a large bowl until combined.
Roll each meatball with your hands, and place side by side in a baking/Pyrex dish.
Place in the oven, uncovered, for about 30 minutes until cooked through.
Serve with tzatziki sauce
