This is probably the easiest thing to make…ever. It was yummy too! I bought chia seeds for another project I am working on, but I thought I would see if this pudding would work and it did! You know when you’re a kid and you eat the fruit on the bottom yogurt? I used to love that stuff as a kid. As a matter of fact, I wouldn’t even touch yogurt unless it was the fruit on the bottom kind. This coconut chia pudding has a hint of sweetness, and tasted even better when I mixed the berries in! Chia seeds are also a good source of protein, there aren’t many carbs in this snack/breakfast either! I drink Shakeology for breakfast, but this was a really good post workout snack!!

1/2 cup chia seeds
2 cups unsweetened almond milk
1/4 cup dried coconut
1 tsp raw honey
9 strawberries, chopped
In a bowl or Tupperware container, add the chia seeds, unsweetened almond milk, coconut and raw honey. Stir together and refrigerate.
After about an hour, stir it so the chia seeds don’t stick to the bottom of the bowl. Then refrigerate overnight.
In the morning, add 3 chopped strawberries to the bottom of a small bowl with about 3/4 cup of chia pudding.
Recipe makes 3 servings
