I am pretty sure everyone on Pinterest has seen those Greek yogurt covered blueberries in the freezer? Yogurt has too much sugar so I think by the time you eat them (all) the carb count would be high lol. So, after I made the Berry Pecan Cheesecake Bars I thought I would make a similar mixture and coat the blueberries in that. I have so many recipes I have not put up yet, and I figured since my husband is on staff duty today, I can spend tonight putting up a few of them!
1 pint blueberries
8 oz cream cheese
2 Tbsp unsweetened vanilla almond milk
1/4 cup Stevia
1/2 tsp cinnamon
*Note: If you do not use sweetener you can replace it with 2 Tbsp Honey. I do honey for the kids.
In a large bowl, mix together the cream cheese, milk, cinnamon and stevia until smooth.
Add the blueberries to the mix until coated, and drop each blueberry onto parchment paper and place in the freezer for at least 1 hour.
Recipe makes 8 servings
Each serving is approx 1/4 cup and is 2.37 carbs
