I haven’t been posting recipes for a while…with my husband home for a visit I just got too busy for all that. I also cooked him things that are already on here, and we were gone a lot. That also means, eating out a lot, which is not good. I am surprised I didn’t gain any weight while he was here lol. I would have died being how after baby #2, just to lose 5 lbs takes SO long. Anyway, my grandpa came over for dinner a few weeks ago, and this is what I made…
For the steak
6 fillet steaks (or one large one cut into portions)
1 Tbsp black pepper
1 Tbsp salt
1/2 Tbsp cayenne pepper
For the mash
1 three pound butternut squash
4 Tbsp unsalted butter
1/2 Tbsp cinnamon
1 tsp nutmeg
1/2 tsp all spice
2 Tbsp Splenda brown sugar
1/2 tsp salt

First make the mash because that takes much longer…
Preheat your oven to 400 degrees.
Cut your butternut squash in half, and place it cut side down on a baking pan. Place in your oven and cook for approximately 45 minutes. You want the outer skin to be golden brown, and if you poke it with your finger, the squash will be soft.
Remove from the oven, and cool for about 10 minutes so its easier to handle.
Scoop the squash into a large bowl, and mash down with a potato masher.
Add all the rest of the ingredients, and stir together. You can adjust the spice if you want, but this is just how I did it.
Now, heat your grill.
Season your fillet with the salt, pepper and cayenne on both sides. I know, people say just use salt and pepper, but i like a hint of spice to it.
Place on the grill for 5 minutes, then flip with tongs and cook another 5 minutes. Make sure your grill flames aren’t too high. If they are, just spray the flames with a little water. You do not want the meat to burn. Cooking the meat on 5 minutes on each side will give you a medium rare steak. Do it about 7 minutes on each side if you like it cooked more.
After you take the steak off the grill, put a pad of butter on top, and after it has melted, plate your steak and serve the butternut squash mash along side.
Recipe makes 6 servings.
Each serving is 1 piece of steak and about 3/4 cup of mash.
