There needs to be more things we can do with eggs because I feel like I have done everything a whole bunch of times. I need to make Eggs Benedict on a mushroom again…or something…
Anyways, this was breakfast this morning…of course I added reduced sugar ketchup to the top after I took the picture because everything is better with ketchup lol. It was good…and the people of the house must have thought so as well because its gone.
6 beaten eggs
1/4 cup water
salt and pepper
1 cup spinach leaves
7 small mushrooms, sliced thin
3 pieces Canadian bacon, chopped
1 Tbsp butter
2 pieces Havarti cheese
Heat a small pan on medium heat and add your butter.
Saute your spinach, sliced mushrooms and chopped Canadian bacon for about 4-5 minutes.
In a bowl, whisk your eggs, water, salt and pepper together. Pour in the small pan over your sauteed vegetables. Place your 2 slices of cheese over the top, and cover with the lid. Cook for about 8 minutes…just until the eggs are cooked through and the cheese is melted.
Recipe makes 6 slices
Each one has less than 1 carb.
