I know some parts of the world are still in 100 degree weather, but we definitely are not. It is cloudy and 64 degrees at my house. So, it was perfect time to make crock pot chili! I don’t make chili like your average ground beef or bean styles. I like mine with chunks of meat in it…its like a mix between beef stew and chili I guess you could say. It’s so simple and really yummy.
Today I decided it was meal prep Sunday. I prepared lunches and snacks for us and the kids so now I don’t have much to do tomorrow. I have started a 30 day boot camp, and I will keep you all updated with how it goes. It is very low carb, no sweets what so ever, and it will help with cravings down the line. I have done this type of thing before…cut out all sugars natural, artificial or otherwise…and by the time day 30 came I had lost weight and felt so much better. Not craving the carb loaded food really helps us feel healthier.
So today I made Chicken Salad and left out the apple. I cut up cucumber rounds and put them in a Tupperware container, so tomorrow I can just spoon the salad onto the cucumber and don’t have to actually make anything. This usually lasts for about 2 days in my house. This lunch is one of my favorites! I also signed up for several work out classes this week at the gym. I have a plan…I need to stick to it. I am the type that does better when held accountable, and it takes 30 days to create a habit, so I am looking forward to the end result!!
Anyway, on to this recipe! Enjoy!
2 lbs beef roast, cut into small chunks
1 large kielbasa sausage link
2 cans diced tomatoes
3 whole tomatoes, chopped
2 small jalapeno peppers, diced
1-1/2 cups beef broth
1/2 yellow pepper, chopped
1/2 red pepper, chopped
1 small onion, diced
3 garlic cloves smashed through garlic press
1-1/2 Tbsp chili powder
1 tsp cumin
1 tsp oregano
1 tsp salt
1 tsp pepper
1 tsp red pepper flakes
Heat a large pan on medium heat, and add a little coconut oil.
Add the sausage to the pan and brown on all sides.
Remove the sausage, and cut into small chunks and add to the crock pot along with all the other ingredients.
Cook on the 8 hour setting.
When the chili is done, spoon into your bowl and top with cheddar cheese.
Recipe makes 8 servings
Each serving has 6.68 carbs
