Crock Pot Chicken Chili
I woke up soo early this morning, and wanted something in the crock pot. It has been cloudy and raining so it was the perfect opportunity for it! I didn’t plan this and just used what I had in the house…surprisingly I had enough stuff 🙂
6 boneless skinless chicken breasts
1 28oz. can of diced or crushed tomatoes
4 cups chicken broth
1 can black beans
1 jalapeno, chopped
1 medium onion, chopped
1/2 cup shredded cheddar cheese
1 Tbsp red pepper flakes
1-1/2 tsp salt
1/2 Tbsp black pepper
1 heaping Tbsp chili powder
1/2 Tbsp oregano
1/2 Tbsp cumin
4 Tbsp sour cream
Put everything but the beans and sour cream in the crock pot, and put it on the 8 hour setting.
The last 1/2 hour drain the black beans, and add those along with the sour cream.
Once the chili is done, shred the chicken with 2 forks. It just falls apart so it only takes a minute.
Top with cheddar and/or avocado if you want to.
