Coconut Strawberry Banana Muffins
Ok this is my first coconut flour experience. I have been wanting to try it for a while, but I didn’t know where to find it out here and I didn’t know how to make it. I watched a video, but it seemed so time consuming I would rather spend the $25 online lol. So for all the things German stores don’t have…they do have some things I haven’t seen before. For example, several types of nut flours AND dried unsweetened coconut flakes which I put in the blender for a while and made flour. I think it worked out pretty well, so next time I need to buy a lot more and make bread and pancakes and things like that. If anyone has any coconut flour tips please let me know 🙂
2 cups Almond Flour
1-1/2 cups Coconut Flour
1-1/4 cups coconut milk
2 heaping tsp baking powder
15 strawberries, chopped
1 Tbsp raw honey
Preheat your oven to 350 degrees
In a large bowl mix together the almond flour, coconut flour and baking powder.
Next add in the egg, coconut milk and honey. Stir until combined.
Mash up the banana in the mixture and stir in the strawberries.
Line your cupcake pan and fill 3/4 of the way with the mixture, and bake in the oven for approximately 25 minutes until cooked through.
Let them cool 100% before you eat them…the consistency is always better once they have cooled 🙂
