Alright guys….this is something I did more on the Paleo side for the kids. I try not to deprive them too much lol. Of course, they eat healthy as well, but they get a higher carb count because they are kids. Normally, children don’t follow the same low carb structure we do since they need carbs for growth and development. So, my kids eat more fruit and grains than my husband and I. These are still low in carbs, but not as low as say cream cheese pancakes. Try them out, all you need is butter on top since the bananas make them sweet. They taste a little like banana bread 🙂
2 ripe bananas
1/2 cup coconut milk
2 Tbsp melted butter
1/2 tsp vanilla
4-1/2 Tbsp coconut flour
1/2 tsp baking powder
1/2 tsp cinnamon
dash of nutmeg
coconut oil for the pan
Heat a large pan on medium heat and drizzle a little coconut oil.
In a medium bowl, smash your bananas with a fork, then add the milk, butter, eggs and vanilla. Whisk together until combined.
Next, add in the baking powder, coconut flour, cinnamon and nutmeg and whisk together.
Spoon about 3 small spoonfuls of the mixture in the pan to make 1 pancake, and cook for about 2 minutes on one side. You will see the edges start to solidify, then you can flip it and cook for about another minute or two on the other side.
You can serve with Kerry Gold butter, paleo jam or honey…or sugar free syrup…depends on what you are into and what you follow. We just did butter.
