Chicken Salad on Cucumber Rounds
This is something I made for lunch as part of our 21 day sugar detox. The only thing I like about my 2 week plan vs the 21 day one is that the 21 day plan only has the food you can and cannot eat. It doesn’t have a list of condiments or anything like that. For example, you can have limited dairy, and mayo has 0 carbs, but can I use it? I don’t know…I just took a judgement call off my 2 week plan and said yes lol. Since I know what has carbs and what doesn’t, I am not carrying around her list with me, I am just going by what I already know and adding in/cutting out some specifics she mentions.
So lets hope it all works…I mean it should…I lost 17 lbs by doing the first 2 week plan plus working out and this is basically the same.
2 chicken breasts
1 celery stick, diced
1/4 onion, diced
1/2 green apple, diced
4 marinated (or regular) green olives, diced
1/2 cup mayo
2 Tbsp Dijon Mustard
1 Tbsp parsley
1/2 tsp salt
1/2 tsp pepper
dash of cayenne
1 cucumber, cut into slices
In a medium pot, fill 3/4 of the way with water, and boil the chicken for approximately 20 minutes. I also add a little salt and pepper to my water just to give it some flavor. Remove the chicken from the pot, and let cool.
In a mixing bowl, add the celery, onion, green apple, olives, mayo, mustard and seasoning. Mix together.
Once your chicken is cooled, chop into small pieces, and add to the mixing bowl. Cover the bowl and refrigerate for about 30 minutes, or you can keep it until the next day, that is up to you.
Place a spoonful on top of each cucumber round.
Recipe makes approximately 30 rounds
4 rounds is 3 carbs
