I have been posting so many things lately, pretty soon I am going to run out of stuff to make lol. I made this for my husband’s lunch today, and he liked it as usual so that’s always good. I mean, this blog is pretty much named after him anyway right, so I would hope he likes the food in it lol. I am pretty sure the only thing he doesn’t like is butter beans, blueberries and crunchy bread….and German Mexican food but no one likes that its disgusting lol. Luckily for us, all that stuff has carbs except for the berries. If I cook them in something, he likes them, but he won’t do whole blueberries…I guess its the bursting part…like if you eat a whole cherry tomato. I have found a lot of people don’t like that, its funny.
Anyway, quite some time ago I made cheddar biscuits using Bisquick mix, and being how we cant eat like that anymore, I thought I would attempt to duplicate it with low carb ingredients. I think this came out pretty good! Super easy too.
4-1/2 Tbsp coconut flour
3 Tbsp flax meal
2 Tbsp unsweetened Almond Milk
1 tsp baking powder
3/4 cup cheddar cheese, shredded
1 tsp oregano
1 tsp pepper
1/2 tsp salt
Preheat your oven to 350 degrees
In a bowl, mix the coconut flour, flax meal, baking powder, oregano, salt and pepper.
Add the eggs and almond milk and whisk together.
You should have a thick batter at this point, then add the cheese and stir with a spoon to combine.
Line a baking sheet with parchment paper.
Take large portions of the batter, and roll into a ball, then press down flat onto the parchment paper. It should be a circle about 1″ to 1-1/2″ thick.
Place in the oven for about 20 to 25 minutes, until the top starts to turn golden brown and the buns are cooked through.
Recipe makes 3 hamburger buns
Each bun has 2.75 carbs
*As you can see I cut the edges of my hamburger bun off because I made them too big lol. I made 2 buns, and they rose and widened a little so it was bigger than planned. If I would have made 3, the size would have been perfect. So, just in case you are wondering, that is why 🙂
