I have never been so lazy in my life lol. Today I did absolutely nothing except make ceviche. I always have at least something to do…but we just sat around and watched Big Bang Theory all day and played with the kids. My daughter didn’t want this though…she just wanted “pizzapetes” that’s what she calls pizza…silly girl. We have a 4 day weekend so hopefully we will do something exciting the next 3 days.
1 lb. peeled and cleaned shrimp
1/2 onion, diced
3 tomatoes, diced
1/4 c chopped cilantro
2 jalapenos, diced
1 large garlic clove through garlic press
2 avocados, diced
salt and pepper
dash of cayenne (omit this if you don’t like the extra spice)
In a medium mixing bowl, add your shrimp and juice all the limes. Mix together and place in the refrigerator.
While this is marinating, chop all your veggies.
About 15 minutes later, remove the bowl from the fridge and add all your other ingredients and mix together. I refrigerate the mixture for about 30 additional minutes.
