Place the cauliflower into a cheese cloth or clean kitchen towel. Squeeze out as much water as you can.
After you have squeezed out all the water, place the cauliflower in a bowl and mix in your 2 egg whites, Parmesan, salt and pepper.
Line a pizza pan with parchment paper, and spread a little coconut oil over the top of the paper.
Press the cauliflower mixture down onto the parchment paper so it is around 1/4″ high. Spread it as evenly as possible…I use a rubber spatula for this.
*To flip the crust, I got another piece of parchment paper and flipped the pan over to the new sheet upside down. Then removed the parchment paper on top.
