1 1/2 cup melted coconut oil
1/2 cup honey
Heat your oven to 350 degrees
In a large bowl mix together the oats and nuts.
In a small bowl, whisk the oil and honey until combined, and pour into the oat mixture.
Place the granola onto a baking sheet (preferably with sides), and bake in the oven for approximately 15 minutes, then stir, and bake another 15 minutes.
Once cooled, store in a Tupperware container 🙂
There are about 42 carbs per serving, but I just made it for mailing the hubby.
If you make 24, each cookie has 8 carbs.
Just a note: if I did not modify this recipe so its lower in carbs, there would have been 26 carbs per cookie using regular sugars.
