I am keeping it basic this week trying to get back to my low carb ways, and start losing weight again! It is so easy to maintain weight on Paleo. You see the sweet potato, raw honey, and paleo treats like “oh its paleo…i can have that”. Next thing you know, you’re maintaining rather than losing. So, I am taking it back to basics like when I first started my journey! Trying to make it to Thanksgiving without anything bad! I need room for the Glühwein after all haha!
These meatballs are SO good and SO easy! This week my team and I meal prepped on Sunday, and these were on the menu with a few other things. I don’t know about you, but I love meatballs, and they keep really well too. I don’t like meat in the microwave…ever…so I just stored them in glass containers and heat them in the oven for a little bit the next day. You can also freeze them if you want!

2 lbs lean ground beef…I used grass fed meat
4 cups fresh spinach leaves
1 medium onion, chopped
1 tsp oregano
1 tsp basil
1 tsp parsley
1 tsp garlic powder
salt and pepper
Preheat your oven to 350 degrees
Heat a pan on medium heat with 1 Tbsp of cooking fat (ex: Kerrygold Butter, Ghee, Coconut Oil).
Add the chopped onion and spinach to the pan and saute until the onions are translucent and the spinach has wilted.
In a large bowl, mix together the ground beef, onions, spinach, oregano, basil, parsley, garlic, salt and pepper. You CAN add 1 egg…but I decided not to here since I wanted them to be AIP friendly too.
Form into meatballs about 2″ around…I used a cookie scooper and used 2 scoops per meatball so they would all be the same size. Place side by side in a baking dish, and bake for 30 minutes.
I wanted to make some Super Bowl related food lower in carbs than your standard party food. I have a lot of options in the Appetizers section of my website, but I thought nachos would be a good idea! I understand Sweet Potatoes are more of a Paleo-Friendly food, but it has a lower GL index than regular potatoes. So that counts for something. Plus they are cut really thin so its not too bad right?! lol
Today I have hit day 30 of my challenge. This is 30 days of a clean eating low carb lifestyle, 30 days of Shakeology and 16 work out days of Insanity. I have lost a total of 10.8 lbs and several inches off my waist. Have I measured? No, but its obvious and my pants fit a lot better. I need a measuring tape, I don’t have one. Here’s a photo…as you can see 2013 was not a kind year for the scale and I. I gained some weight and was SO mad at myself because I had lost 70 lbs, then gained 18. It has taken a lot to get it off, with 1 lb here 1 lb there, but losing over 10 in the last 30 days has been really exciting!! So onto these primal style nachos…if you want them to be 100% Paleo just leave out the cheese.
For the pork:
2 lbs pork shoulder or any pork roast
1/2 onion, sliced thin
1 Tbsp Paprika
2 tsp Salt
1/2 tsp Garlic Powder
1 tsp Black Pepper
1 tsp Cayenne Pepper
3/4 cup Red Wine Vinegar
2 Tbsp Worcestershire Sauce
1 Tbsp Dijon
1 cup water
For the Guacamole:
1 tomato, diced
1/4 onion, diced
1 jalapeno, minced
1 lime, juiced
1/4 tsp garlic powder
1/4 tsp salt
1/4 tsp pepper
For the Nachos:
2 cups of pulled pork
1/4 cup Guacamole
1 tomato, chopped
1 jalapeno, sliced very thin
1 cup cheddar cheese, grated
1 sweet potato, peeled
1 cup coconut oil
First you want to make your pork. I did mine the day before because its easier. This is something you can do and make 2 meals with the pork. I used some of mine for these nachos and the rest I will use for pulled pork lettuce cups. So put all your pork ingredients in the crock pot, and run on the 8 or 10 hour setting. Once this is done, shred up with a fork. For your Guacamole, smash your avocado into all the rest of the ingredients and mix/mash around very well until everything is combined. Set aside. Heat a pan on medium heat and add your coconut oil. Use a mandolin on the 1/8″ slice setting, and slice your sweet potato. If you don’t have a mandolin you can slice by hand, but it will take a while because you need the chips to be thin. Once the oil is hot, add a few sweet potato slices at a time. After about 3 minutes, flip and cook another 3 minutes. Drain the sweet potato on a paper towel lined plate and sprinkle with a little salt. Do this until you make chips out of all your sweet potatoes. Make sure to keep an eye on things, they will burn easily if you do not watch them. When you have made all your chips, place them on a serving tray. Cover your chips with cheddar cheese and place in a warm oven for a couple minutes, just until your cheese melts. You do not want to crack your plate or harden the cheese. My oven was at 350 and it only took about 5-6 minutes. Remove the plate from the oven and add your tomato, jalapeno, shredded pork and guacamole to the top!
This chicken dip is so good as-is with veggies to scoop it up, but it is also a really awesome crepe filling with low carb crepes! I will post that recipe soon too!

2 boneless skinless chicken breasts, boiled and shredded
5 large sun dried tomato pieces, chopped
1 block feta cheese, crumbled
8 oz cream cheese (use whipped or softened)
1 cup plain Greek yogurt
1 Tbsp fresh dill, minced
1/2 tsp pepper
1/4 tsp salt
(Dash of cayenne is optional)
Preheat your oven to 350 degrees
In a large bowl, whisk together the softened cream cheese and plain Greek yogurt.
Next, add in the shredded chicken, feta cheese, sun dried tomato, dill, salt and pepper. You also add the dash of cayenne here if you are using it.
Mix together until well combined, and add to a baking dish.
Cook for about 30 minutes, until the top starts to get golden brown and the cheese is melted.
Once removed from the oven, stir the mixture and serve with your choice of veggies!
