Butternut Squash Fries
These are as close to fries as you are gonna get (in my opinion). They are kind of like sweet potato fries, and so good!
1 large butternut squash
In a large pot, fill it half way with vegetable oil and turn the heat on medium heat.
While this is heating up, use a peeler and peel the skin off the squash. Cut it in half and begin to cut it into strips.
Once you have all the squash cut, put a handful at a time in the hot oil. Once the squash is cooked, about 5 minutes, take it out and drain on a paper towel. Continue doing this until all the squash is cooked, but not crispy yet.
Put the squash, in small batches, back into the hot oil. When you fry them twice they turn out more crispy and not very soggy. Fry them about another 5 minutes or so, or until they get crispy.
As soon as you remove them from the oil to drain on more paper towels, sprinkle seasoned salt all over, and you are done!
I didn’t count the fries, but the amount depends on the size squash you have.
One medium butternut squash has 22 net carbs. If you want to weigh it, you will have a better idea. For 1/4 lb it is 11 carbs. We split ours between 3 people so we each ate 7.3 carbs. If you serve this with a burger on lettuce and some cheese, you may not even hit 10 carbs for your meal.
