Buffalo Chicken is good…it started with the dip and chips…then the dip and celery…buffalo chicken cauliflower pizza and now mushrooms lol. No, it isn’t “healthy” or “clean eating” but it IS low carb. Sometimes a little on the bad side while still low in carbs is OK too 🙂
2 chicken breasts, boiled and shredded
1 celery stalk, diced
2 oz cream cheese
1/4 cup blue cheese dressing
1/4 cup ranch dressing
1/4 cup buffalo wing sauce
1/2 cup shredded cheddar
10 large mushrooms
Preheat your oven to 350 degrees
Remove the stem and the insides of your mushrooms, and place in a baking dish.
In a small pan, heat on medium, and add a drizzle of olive oil.
Add your celery to the pan and sautee for approximately 5 minutes, until they are tender. Then add the cream cheese, blue cheese, ranch and buffalo sauce. Stir together until the cream cheese is melted.
In a bowl, add your shredded chicken and the buffalo sauce mixture from the pan. Mix together until the chicken is coated.
Spoon the chicken mixture into your mushrooms, and top with cheddar cheese.
Bake in the oven for approximately 20 minutes until the cheese is golden.
