Breakfast Zucchini Boats
I am always on a mission to find different things for breakfast, so I made these today and they were exactly what I wanted 😛
1 zucchini, cut in half
3 eggs, whisked
5 pieces of deli sliced ham
2 pieces of bacon
4 mushrooms, chopped
3 Tbsp parmesan cheese
2 slices mozzarella cheese
salt and pepper
Preheat your oven to 350 degrees.
Place the 2 pieces of bacon in the oven, and cook until crispy.
While the bacon is cooking…after you have cut your zucchini in half, spoon out the middle so there is just a small rim of zucchini around the sides.
Heat a small pan on medium heat, and add a little butter or olive oil…whichever you prefer.
To the pan, add your chopped mushrooms and ham. Saute for about 5 minutes until the mushrooms are tender and the ham is heated/slightly crispy.
Spoon the mushroom and ham into a small bowl, and add your parmesan cheese, salt and pepper.
In the same pan, add your whisked egg and make scrambled eggs. When those are done, add them to the same bowl.
By this time, your bacon should be done or close to done. Once done, crumble the bacon into the egg and veggie mixture.
Spoon the mixture into your zucchini boats and top with small slices of mozzarella cheese.
Bake in the oven on a cookie sheet for about 10 to 15 minutes…just until the cheese is melted and the zucchini is slightly tender.
Recipe makes 2 zucchini halves like the image above.
