I had some coconut flour tortilla batter left over, so I decided to make breakfast tacos with it. So yummy!
5 sausage links
6 slices Canadian Bacon
6 slices Bacon
1/2 cup cheddar cheese, grated
1 tomato, diced
salt and pepper
Preheat your oven to 385 degrees
In a large baking dish, lay out your bacon and sausage links. Place in the oven for approximately 25 minutes…until the bacon looks crispy and sausage is browned.
While that is cooking, heat a small frying pan and make your Coconut Flour Tortillas from this link.
Heat a large pan on medium, and add a little butter.
Add the Canadian bacon to the pan and cook for about 3 minutes on each side. Remove and set aside.
Whisk 10 eggs with 1/4 cup water and a little salt and pepper, and add to the same large pan to make scrambled eggs. I am sure you know how to do this 🙂
Once the bacon and sausage is done, remove and set on a paper towel lined plate to drain off the grease.
Chop up your bacon, sausage and Canadian bacon.
To assemble, place a large scoop of scrambled egg on top of a tortilla, and top with bacon, Canadian bacon, sausage, some diced tomato and cheddar cheese. I added a little Reduced Sugar Ketchup to mine because I love it!
