I will start by saying, my Christmas tree died. Yup. It is December 19th and my Christmas tree is dead. I have to believe it was sitting in the lot for a while because how could it be dead? I did the same thing I do every year, and every year it lasts at least 4 weeks. When I take it to the trash around New Years it’s still alive. However, this one lasted not even 2 weeks. I vote defective lol. So my husband cut it into pieces and we threw it in the trash. Now, tomorrow morning, we are getting a new one. WHOO! 2 trees in one month. That’s fun right?! Decorating my tree twice…undecorating twice…cleaning up little needles twice. Fun……right??
This is similar to a recipe my mom uses, it has Russian dressing and Apricot Jam, Onion mix, etc. So, as you can see, it isn’t a healthy option. I made a few adjustments for you guys with this recipe, and it is still great!! Try it out and let me know what you think!!
5 boneless skinless chicken breasts
1/4 cup mayo
3/4 cup apricot jam – has to be sugar free or no sugar added (or homemade without sugar)
1/4 cup ketchup
3 Tbsp coconut oil
1 tsp dried parsley
1 Tbsp dried onion flakes
1 tsp onion powder
1/2 tsp dried celery
1/2 tsp garlic powder
1/4 tsp salt
1/4 tsp pepper
Preheat your oven to 350 degrees.
Heat a small pan on medium heat, and add in all the ingredients, but do not add the chicken. Stir and cook for 5 minutes until all the sauce ingredients are melted together.
Place each chicken breast side by side in a baking dish, and cover with the apricot sauce.
Cover your baking dish with foil, and place in the oven for 30 minutes.
Remove the foil, and cook for another 10 minutes.
That’s it, super easy!
I usually serve this along side spaghetti squash or roasted veggies.
Recipe makes 5 servings.
Each serving has 8.2 net carbs.
Just a note: this kind of cooks in the sauce, so there’s always a lot left over in the pan. I cut the net carb count in half and call this about 4 carbs because its not like we eat all the sauce in the bottom of the pan. However, if you’re like my husband and pour it on the chicken and veggies on your plate, go ahead and call it 8.2 lol.
