Almond Crusted Chicken
Thanks everyone for following my posts! I got over 1500 views in just a couple days…that doesn’t usually happen lol. Partly because I do not post nearly enough…and to make matters worse, I FINALLY started reading 50 Shades of Grey. First off…where have I been? Second, this is one more thing I do not need….but whoa. That book is something else haha. You know I stayed up until 5:30 in the morning reading it?! I had to be up for work at 6:30 so that made for an interesting day. Not a very good decision lol…but no work tomorrow and the books will get read!
So back to this recipe thing 😉 I know there is a lot of fish on my page…I didn’t even realize for a while. I am trying to get back into other meats as well so I can send you all some more recipes. This time I made almond crusted chicken and herb butter broccoli. My son said this recipe gets a 97% haha…I am guessing cake gets the 100% votes. Kids and their sugar…I cant stand it.
5 boneless skinless chicken breasts
2 cups almond meal
1 tsp salt
1 tsp pepper
1/4 tsp cayenne pepper
1 Tbsp parsley
1 Tbsp oregano
1/2 Tbsp basil
1/2 Tbsp onion powder
egg wash – 2 eggs and 1/4 cup water whisked
Heat a large pan on medium heat, once hot add a few drizzles of olive oil
In a large bowl mix together the almond meal and salt, pepper, cayenne, parsley, oregano, basil and onion powder.
Dip your chicken breast into the egg wash, then coat with the almond meal mixture. Place the chicken in the pan and cook on one side for about 8 minutes, then flip and cook the other side.
Your chicken should be cooked through and the almond meal will be crusted and golden brown.
I made some herb butter broccoli with this by steaming broccoli then tossing it in some of the herb butter I made from this salmon recipe.
Recipe makes 5 servings
Each serving has less than 1 carb
With the broccoli, each serving has 3 carbs
