Almond Butter Cookies
I tried these with peanut butter and they were good, but these are so much better. I made my own Almond Butter…saved some…and used the rest for cookies. Sometimes you need the sweet.
2 cups roasted almonds
1/2 cup coconut oil, melted
1 Tbsp raw honey
1 tsp Torani Vanilla Syrup
3/4 cup Splenda
Preheat your oven to 325 degrees
In a food processor, grind your almonds until they turn into almond meal.
Add the melted coconut oil, honey and vanilla syrup.
Grind until you get almond butter. If it is too thick, you can add a little more coconut oil. At this point you will have awesome almond butter.
In a bowl, use 2 cups of almond butter and add the Splenda and eggs. Mix together until everything is combined.
Spray your cookie sheet with cooking spray, and place small rounds onto the sheet. Bake for about 12 minutes until golden. The outside is a little crumbly, but the inside is soft.
